White Zinfandel greets the nose with aromas of violets and strawberries. The bright, crisp mouth is sweet with ripe flavors of raspberries and kiwi fruit. The color is brilliant rose with purple hues. In creating White Zinfandel, the grape skins are left in contact with the juice for several hours. This creates a blush wine with pink rather than red color. Another technique that sets White Zinfandel apart from others is arrested fermentation. The alcoholic fermentation is stopped before the yeast have converted all of the natural grape sugar into alcohol. In doing so, the natural sweetness of the wine is maintained. Grape juice concentrate is not added.
